Coeliac disease is an autoimmune disorder caused by a permanent intolerance to gluten or, more specifically, to gliadin, a protein fraction found in gluten. Gliadin is found in gluten-containing grains such as wheat, barley and rye. In genetically-predisposed people, ingesting gliadin induces a severe autoimmune response which damages the lining of the small intestine.
